I think we all have a favorite snack or dish that reminds us of our childhood. Mom or dad would make it and in most cases, you would sit and enjoy it together. That was definitely the case with something yummy I made the other day. I had not made it in a few years and instantly I was taken back to the 'good ol days' when momma would make it for little Rebecca. 

Looking back I have to think about sneaky she was. You see, the recipe has cottage cheese in it. What kid do you know likes cottage cheese? Well played momma, well played. Either way, I grew up loving it, still love it to this day and now my daughter loves it! I pulled the same thing on her. lol

So here is the 'recipe' for a super simple snack that will satisfy any sweet tooth. The ingredients are:

  • a can of crushed pineapple
  • a box of your favorite flavor of Jell-O (I prefer lime flavored for this recipe)
  • a tub of any brand cottage cheese
  • 1 tub of Cool Whip

The finished product! It may not look too appetizing but I promise it's good. If you would like to use another flavor of Jell-O, be my guest, it may be a prettier outcome. lol

Four ingredients. So simple, here is what you do. Drain your canned pineapple real good, pour it in a bowl, pour the cottage cheese in the same bowl, add your Cool Whip and once you open the Jell-O packet (do NOT make the Jell-O) simply pour the powder into your mixture and mix it all up! Also, I love pecans with everything, so add some chopped up pecans for crunch if you like.
