Today is National Corn on the Cob day! I mentioned on the radio that no one really likes boring old corn on the cob anymore do they? We are all about some ELOTE now. Roasted corn baby!

The best thing about roasted corn or elote is the toppings without a doubt. So I want to know, what are your favorites? You've got some hot, fresh, roasted corn in your hand....what are you putting on it? For me it's slathered in butter, followed by pepper, a little bit of Tajin, lime, mayo and parmesan cheese. Yum!
