My Birthday Brisket
You guys know I'm always doing something on the grill so a brisket normally wouldn't be anything special...but this one is.
This ladies and gentlemen, this is a wagyu/angus brisket from Tall City Meat Market. This last weekend was my birthday and rather than have a giant party like last year, I wanted to tone it down and just do what I like doing best. Is it more pricey than what you'd normally pick up at the supermarket? You bet your ass it is lol, but let me explain.
Now, I will say this. I got it home and opened it up to season it, and was met with a strong smell. Initially, I called the store to tell them they sold me a spoiled brisket. I'm not gonna lie. I was super mad when they didn't answer the phone and it was almost closing time and I didn't have time to drive back there before they closed. Luckily, the owner called me back after closing time and explained to me that the smell was normal because of the wet aging process. This process makes for a much more tender and flavorful brisket. I was still a little leery, but I told him I trusted that he was the professional and if he said it was safe to eat, I was gonna go ahead and smoke it...and I'm glad I did.
As you can see, it turned out awesome and man Tall City Meat Market didn't lie when they said it'd be the best brisket I'd ever have. Even with these thick cuts, it passed the dreaded fold test and just look at that smoke ring. It was tinder, moist, and cooked damn well f I do say so myself. The owner of the shop even called me on my birthday to ask me how it turned out. Now THAT is customer service. All in all, it was a great birthday weekend.
