Midland-Odessa knows great food.  Having said that, one notable local restaurant that is continuously bustling with people is Rosa's Cafe.  A popular Tex-Mex restaurant that has captured not only our hearts but our stomachs as well.

The story of how Rosa's Cafe came to be stretches back to 1983 in San Angelo, Texas.  However, it wasn't until 1995 that founder Bobby D. Cox managed to expand to other cities beyond San Angelo. With over 50 locations spread throughout Texas and neighboring states, Midland-Odessa is not the only region where the restaurant has found success.

There aren't many places in Midland-Odessa that offer better Tex-Mex than Rosa's Cafe.  In fact, Tex-Mex cuisine as a whole exploded in popularity for over a century.  Which initially originated from Mexican immigrants who migrated to Texas. The food infuses traditional Mexican dishes with Texan-inspired recipes. Hence the name "Tex-Mex".

Rosa's Cafe offers an assortment of options ranging from fajitas, enchiladas, burritos, and even nachos to name a few.
