
Midland, Texas Newest Downtown Eatery Impresses
Midland, Texas - As time passes, more and more options for Midlanders to eat and drink at are popping up. Enter, downtown Midland's newest eatery/bar called Saint Blaise.

Lee Sanchez and Emilio Castellon, who both co-own Sip Haus and Leesco's, recently opened Saint Blaise in February 2025, bringing yet another upscale establishment to downtown Midland.
Mr. Sanchez described Saint Blaise as a cumulation of his and Mr. Castellon's favorite dishes. It serves breakfast, lunch, and dinner and specializes in American comfort food, cocktails, East Coast-sourced oysters, and martinis.
Aside from the food, Saint Blaise also has a full bar, making this another stop for people bar hopping in Downtown Midland on any given Friday or Saturday night. However, it does not stop there and offers an exceptional happy hour.
Saint Blaise is meant to be warm and inviting. Whether you are here for a celebration or a casual lunch, we invite you to come out and sit a while. -Lee Sanchez
I certainly like the idea of another upscale option for the city of Midland. I hail from San Antonio, where these types of experiences are regularly common. It is nice to see Midland, Texas getting eateries and bars that can double as upscale or for a casual dining/drinking experience. I wish Mr. Sanchez and Mr. Castellon all the success in the world and am hopeful that Saint Blaise sticks around for many years to come.
