Just about everyone who lives in Texas is aware of something that everyone else who lives in other parts of the country may or may not know. Texas BBQ reigns supreme and is superior to every other BBQ in not only the United States, but also the world. You cannot convince me otherwise, and yes, I will die upon this hill.

BBQ has been a long-standing staple of Texas culture. It's safe to say, we take it VERY seriously. Here are some reasons why Texas BBQ stands apart from everyone else.
It's All About the Beef
Other regions may focus on pork (Carolina pulled pork) or ribs (Memphis) as their specialty. In Texas, the focus is on beef, especially brisket. With an abundance of Texas cattle, it really comes as no surprise. Cooking low and slow for 10 to 18 hours, so that the meat melts off the bone, is a standard.
The Secret Is In The Fire
While some regions may feel cooking on an electric cooker or using a gas grill is acceptable, in Texas, we use wood. However, charcoal is also accepted. Using either oak or mesquite gives Texas BBQ a certain flavor. Yes, you can tell a difference between BBQ cooked on a propane grill versus being cooked with wood.
Smoke Smoke Smoke
Texas pitmasters rely on smoke, not relying on drenching the meat with sauce. Smoking Texas BBQ to where it has that distinctive smoky flavor is something that contributes to giving the beef that delicious bark that covers every inch of the meat. If it doesn't have a smoky flavor and a bark, is it really Texas BBQ?
