Grilled Meatloaf? Hell to the Yes!
Yes, it's true. I grilled a meatloaf....and it turned out AWESOME! I get a ton of my recipes from the Traeger app, but I modify them as I go to fit how I like. Here's how I did mine, and you should definitely check out the Traeger app if you wanna step away from the typical brisket, ribs, and steak.
2lbs of beef
panko crumbs 1 cup
salt 1 tbsp
pepper 1 tbsp
2 tbsp of your favorite beef seasoning mix
fine chopped red bell pepper 1
fine chopped chives 1 bundle
Sweet Baby Ray's BBQ sauce
Just take everything I just mentioned, (other than the bbq sauce) throw it in a big ass bowl, mix it up really well. Make sure you mix it well enough that everything is pretty evenly distributed. The chives and peppers make it easier to tell how well it's mixed up because you can see them easily. Finally, mold that bad boy into a loaf and throw it on a cooking sheet.
Get that grill to 225, throw that wad of deliciousness on the grill for a couple of hours, and have a beer or 2 while you wait. On a hot day, Ultra Cactus Lime is pretty damn refreshing btw.
After 2 hours, take the loaf off. Heat the grill up to 375, then throw the meatloaf back on the grill until the middle is 155 degrees. You'll need a meat thermometer obviously. Once the loaf hits 155, glaze that sucker with the BBQ sauce, leave it on the grill for another 15 minutes, then yank it off of there and let it sit for about 10 minutes before you slice it up. That 10 minute resting time is important. It actually continues to cook while resting so don't skip that part.
