With colder weather fast approaching, I decided to do something a little different with my blog and share one of my family's favorite 'cold weather' recipes. It's a heart healthy soup recipe, so it's good for you too.

It's also a really quick meal when you have a super busy day (like us today) and don't have time to cook a full meal for your family. A friend wrote this recipe down for me a few years back and unfortunately I lost what he wrote it down on but I'm still able to rely on memory! Basically it goes something like this:

1 lb. hamburger meat

1 can stewed tomatoes

1 can pinto beans

1 can kidney beans

1 can hominy

1 small onion (use as much as you would like)

1 small can (diced) green chilies

1 pkg. taco seasoning

1 pkg. (lite) ranch dressing

1 can rotel

Brown the meat first, then literally throw it all in your pan and let simmer for about 30 min. You will love it and it makes plenty. Enjoy!
