In West Texas, It's safe to say we are all pretty opinionated on our BBQ. Any given summer, spring, fall, or even wither weekend you can walk outside and you don't have to walk very far before you smell that old familiar scent of mesquite burning in the grill. As a matter of fact, I'm fairly certain it's illegal to use any other kind of wood to grill in west Texas. Mesquite is in my opinion the best smelling and best smoking wood you can use.

When it comes to gas VS charcoal, I'm afraid I have to tell Hank Hill, his propane and his propane accessories can take a hike. Nothing tastes better than a good wood burning or charcoal grill.
